Chef Carmelo Riccardo Cali is one of the 6 nominees for this year's Feinschmecker - a leading German gourmet journal - "Rising Star of the Year" award. The winner will be announced on November 9, 2024 in Hamburg.

 

To have dinner there yesterday was a spur of the moment decision by Annette, Claudia, Louie and me in the evening of the day before yesterday and we only got a hint of the sophistication and quality of Carmelo's cooking as he did not offer his 2 regular menus yesterday - one you know what is being served "1811 Experience" and the other one you do not know "Carta Bianca" (4 (Euro 79) to 7 (Euro 109) courses without wine). 

 

Instead, yesterday only a more basic, family-style dinner „É PRONTO A TAVOLA!”, where you share the plates, was offered (he has done this a couple of times so far).  

 

Still, we enjoyed the food, the wines and the ambiance very much. For sure, we will be back for the "Carta Bianca" or the "1811 Experience" menus, the real thing.

Carmelo Riccardo Cali

Carmelo Riccardo Cali erhielt von 2009 - 2012 eine Ausbildung der "Jeunes Restaurateurs" in Koblenz mit praktischen Lehrjahren im Hotel & Restaurant Kronenschlösschen in Hattenheim bei Chefkoch Patrik Kimpel, ausgezeichnet mit einem Michelin-Stern.

Bei Sternekoch Carmelo Greco in Frankfurt, der zu den fünf besten Italienern Deutschland zählt, war er Chef de Parti, bevor er wieder in Kronenschlösschen nach Hattenheim als Junior Sous Chef von Sous Chef Ryan Scholz und dem neuen Küchenchef und Sternekoch Sebsatian Lühr zurückgeholt wurde.

Auf Mallorca "Es Passeig" bei Marcel Battenberg bekommt er den letzten Feinschliff.

2018 eröffnete er im Restaurant seiner Eltern seinen Chefs Table, geboten wurde dort bis März 2022 ein Konzept Namens "Carta Bianca" Weiße Karte - Freie Hand für Riccardo. Gekocht wurde ein 3-6 Gang Überraschungsmenü für maximal 8 Personen an einem Massiven Eichenesstisch mit blick in die offene Küche. 

Nun ist die Zeit reif für eine eigene Location mit Showküche und etwa 35 Sitzplätzen. Das ausgefallene offene Konzept im Industrie-Stil und gemütlicher Atmosphäre ist eine frische Ergänzung für die Hofheimer Gastronomie-Szene in der Innenstadt.
