Tuscany - Chianti Classico, Brunello di Montalcino, Vino Nobile di Montepulciano, Super Tuscans, Maremma, Bolgheri - 2026 by ombiasy Wine Tours, led by Annette Schiller, took place from June 8 to 18, 2026. The tour started in Florence. There were 14 participants, including Annette and myself,

Participants arranged their trip to Florence individually. Annette and I flew from Washington DC to Frankfurt 10 days before the start of the trip and went by train from Frankfurt to Florence 2 days before the trip. 

We spent 2 evenings in Florence.

On the first evening, Annette and I went to Enoteca Bellini.

On the second evening, Annette and I teamed up with 4 other members of the group and had dinner at Trattoria San Lorenco. We picked it because it was near the hotel of Naomi and John and it was one of the few restaurants in Florence with an on-line wine list, which looked interesting to us.

Following dinner, on the way back to the hotel, we stopped at In Vino Veritas, Vino & Schiacciateria, for a bite and a glass of wine - "one for the road".  The place is amazing: outstanding wine selection by the glass, from entry-level to high-end wine, delicious food and an outstanding ambiance.

Schiacciateria 

A schiacciateria is a traditional Tuscan sandwich shop or bakery specializing in schiacciata, a famous regional Italian flatbread similar to focaccia. The term literally translates to a place that makes or sells "crushed" or "flattened" bread. These establishments slice the golden, olive-oil-brushed bread horizontally to create massive, flavorful street-food sandwiches.

The Bread: Made from a simple dough of flour, water, yeast, salt, and extra virgin olive oil.

The Technique: Bakers dimple the dough with their fingertips to create pockets that hold olive oil and coarse salt.

The Texture: Baked at very high heat to ensure it is incredibly crispy on the outside while remaining light, airy, and chewy on the inside.

Focaccia Comparison: It stretches thinner and bakes up crunchier and saltier than traditional Ligurian focaccia.

Classic Sandwich Fillings - Schiacciaterie focus heavily on local Tuscan ingredients:

Cured Meats: Prosciutto crudo, finocchiona (fennel salami), mortadella, and porchetta.

Cheeses: Fresh pecorino toscano, stracciatella, and creamy burrata.

Spreads & Extras: Truffle cream, pistachio pesto, sun-dried tomatoes, fig jam, and fresh arugula. craze for massive schiacciata sandwiches.

Our recent long weekend in Tuscany began unexpectedly well. It was just past 5.30 pm, close enough to the witching hour of 6 pm, when we stumbled into In Vino Veritas on a corner site in the centre of Florence, a few minutes’ walk from the Uffizi. I am not sure what, other than thirst, lured us in but it proved a delightful stop.

 

This wine bar, in the truest sense of the word, also calls itself a schiacciateria, after the particular type of flat bread which, along with sandwiches made from focaccia, fill its front window. Behind the counter was a smiling barman, a Coravin and bottles from all over Italy. On offer were glasses of Tignanello, Sassicaia, Biondi-Santi, Guado al Tasso, Le Macchiole, Cepparello and many other wines. Every inch of the interior seems to be taken up with bottles at all angles, along with stools for 16 and a couple more out on the street.

 

The owners’ philosophy is simple: to offer the very best wines produced in Italy by the glass. But it is the extremely friendly approach of the young man and woman working there who made this half-hour so memorable.
