3-course "Bistronomique" Dinner at Restaurant Brut Maison de Cuisine in Blois, with Owner/ Chef Adrien Delafoy - Loire Valley 2024 by ombiasy WineTours









2024 Loire by ombiasy Wine Tours, led by Annette Schiller, took place from Sunday, June 9 to Thursday June 20, 2024. The tour started in Nantes and ended in Sancerre.

In Blois, we stayed 2 nights at the Hôtel Mercure Centre Blois, a 4-star hotel on the banks of the Loire River within a five minute walk to the city center of Blois and the Royal Château of Blois. 

We were also close to some of the most beautiful and important Loire Châteaux: Chambord, Cheverny, Beauregard, Chaumont. 

On the first night, we had dinner at Restaurant Brut Maison de Cuisine, the relatively small restaurant of Owner/ Chef Adrien Delafoy. Chef Adrien does “bistronomique” cooking with seasonal and local ingredients. The wine list is long and impressive with most of the wines being "natural", organic or biodynamic. 

The restaurant is on the other side of the Loire river and we enjoyed a great walk to the restaurant and back to the hotel crossing the Loire rive on the 300 years old Pont Jacques Gabriel , with a great view on the Loire river, the Château Royal and the town of Blois.

This tasty bistro with a contemporary feel has an open kitchen, shelves filled with jars of fermented vegetables and books… and just a handful of tables, so it's best to book. The chef, who has a solid track record, devises a short menu that changes regularly. The three pillars of his cooking are seasonality, local ingredients (such as Racan poultry) and modern, often bold cuisine, for example his dessert that combines a naturally sweet Jerusalem artichoke cream and a coffee ice cream with a pronounced flavour. On the Quai de Loire, an address that's not so brutal, but rather welcoming and inviting. The menu is rather limited, but there's something for everyone, in a creative vein based on local produce. We appreciate the seasonal nature of the produce, as well as a few surprises here and there: the cochon roi rose de Touraine braised Chinese cabbage spiced yoghurt and herb salad, or for dessert, the roasted parsnip purée with white chocolate kumquat paste sorbet, mandarin and gavotte. Intimate yet friendly atmosphere, experienced but slightly long-winded service, extensive wine cellar, well-informed about the region and well advised.

All of the vegetables at this small, modern French spot in the town of Blois come from within 12 miles, the meat is all from the Loire region, and the wine list includes bottles from the restaurant’s own backyard. Expect a tight menu that changes weekly based on what produce is at its peak, like autumn butternut squash with duck breast or a summery cucumber gazpacho with bonito and a blanket of fresh herbs and pickled cherries.

Originaire de Saint-Gervais, après un bac pro cuisine au lycée hôtelier de Blois, Adrien Delafoy a fait ses armes en pâtisserie chez Anne-Sophie Pic, puis en Suisse, enfin en tant que chef pâtissier chez Laurent Petit, chef 3 étoiles à Annecy. C’est là qu’a mûri le projet d’ouvrir son propre restaurant qu’il a finalement concrétisé au début de l’année 2021 en choisissant d’installer Brut, maison de cuisine, parce qu’il « n’aime pas le mot restaurant qui n’exprime pas le plaisir », 14 quai Villebois-Mareuil. 
 
Accompagné de son ancien collègue, Thomas Gaudard, il y met son expérience de la cuisine gastronomique et étoilée au service de produits de saison, locaux, bio, dans un souci d’approvisionnement «en circuit le plus court possible».

La carte, courte également et composée en fonction des arrivages, est complétée par une carte des vins élaborée en partenariat avec la Cave des affranchis voisine, avec qui il partage la passion des vins naturels.
