From Lyon to Paris: Total Immersion in Burgundy and Champagne 2023 by ombiasy WineTours took place from Sunday, July 02 - Thursday, July 13, 2023. The tour started in Lyon and ended in Paris.

At Domaine Servin, right in downtown Chablis, we were received by Mark Cameron, the Australian associate of François Servin, who me also met towards the end of the visit. We tasted from tank, barrel and bottle with Mark.

Domaine Servin in Chablis
The domaine Servin is one of the
oldest, largest, and most renowned family run wine estates in the
Chablis region. The current owner is François Servin. The Servin family
has been involved in wine since 1654.
Today 75 acres spread throughout the Chablis region belong to the domaine. The domain has parcels in 4 of the 7 Chablis Grand Cru vineyard sites and is one of the only 7 producers in Chablis that own Grand Cru plots. For new plantings François Servin is using uncloned Chardonnay and planting it at greater density. It will be great to be able to compare the Servin wines with the Brocard wines.
Domaine Servin produces rare unoaked, very minerally, racy Chablis, which I personally enjoy very much, but for the casual Chablis drinker these wines might come across as rather non-Chablis style wines.

François Servin, along with his Australian associate Mark Cameron, direct the operations of this 30 Ha domaine. Tradition is important to the Servin family, which because of its long history in Chablis, owns some great parcels; four Grand Crus - Blanchots, Bougros, Les Clos and Preuses; six Premier Crus - Butteaux, Les Forets, Montee de Tonnerre, Monts de Milieu, Vaucoupin and Vaillons. Even the parcels of village are very well situated, with their largest, les Pargues, formerly being a Premier Cru. François, however, while appreciating the great tradition, has taken great steps to bring this domaine (with the spectacular potential sites) into the forefront of Chablis. He has resumed the practices of hand harvesting (all the Grand Cru are now hand harvested; a large portion of the Premier Cru, too). For new planting, he is using uncloned Chardonnay and planting it at greater density. Some cuvées are being bottled for us with no filtration, and we work closely together sharing ideas.
