From Lyon to Paris: Total Immersion in Burgundy and Champagne 2023 by ombiasy WineTours took place from Sunday, July 02 - Thursday, July 13, 2023. The tour started in Lyon and ended in Paris.
Domaine Jessiaume in Santenay was the first of the several estates we visited in the Côte de Beaune.
DG/ Winemaker William Waterkeyn was our host. He joined us on our bus and we drove together to the vienyards of Domaine Jessiaume for a vineyard walk. After returning to the estate, William took us to the winemaking facilities, before a tasting of the Domaine Jessiaume wines.
Côte de Beaune
A narrow strip of land less than 5 kilometers (3 miles) wide, and running for 25km (16 miles) in a north-easterly direction, the Côte de Beaune's main vineyard area is almost precisely the same size and shape as its northern counterpart, the Côte de Nuits. Together these two make up the wider Côte d'Or, a region named after and characterized by the Côte d'Or limestone escarpment which forms its backbone.
The importance of this escarpment to Côte de Beaune viticulture is hard to understate. Not only does it protect the vineyards from prevailing westerly winds, it also provides gently sloping, free-draining vineyard sites with near-perfect south and south-easterly aspects.
Domaine Jessiaume in Santenay, Côte de Beaune
Domaine
Jessiaume was founded in 1850 by the Jessiaume family and with the
quintessential Burgundian tiled roof it is a beautiful, iconic building
in Burgundy. It is located right in the heart of Burgundy, in Santenay
the southernmost village of the Côte de Beaune. The 37 acres of
vineyards are in top plots in Beaune, Pommard, Volnay, Auxey-Duresse and
Santenay.
In 2006 the Jessiaume family sold the estate to Scottish businessman, Sir David Murray. Initially the Jessiaume family stayed on making the wines. In 2014 Sir Murray hired American Megan McClune as managing director and one year later she recruited William Waterkeyn as winemaker. From now on the winery changed course. Substantial investments in new equipment and a complete renovation of the estate were undertaken. Under the leadership of Megan, winemaker William Waterkeyn started the conversion to organic farming. He immediately made huge changes in the vineyards and cellar. The goal was to produce elegant, pure wines which show the place where they grew.
In 2020 the
domaine changed hands again. Dr. Jean-François Le Bigot, a
pharmacologist from Paris and Burgundy wine afficionado, acquired the
domaine. He kept the team and his goal is to further foster the
development
towards sustainable wines of highest quality.
“Farming organically allows us to enhance pure terroir expression”, says the estate’s winemaker William Waterkeyn. “In the winery, we go above and beyond the requirements of certification. We use wild ferments, no winemaking aids or sulphites before fermentation, which allows us to fully express provenance. Our wines have a signature terroir style that is recognisable in a blind tasting. They show great complexity and that is a strength”.

The Domaine was created in 1850 by the Jessiaume family. Between 2006 and 2020, the Domaine was owned by a Scottish businessman, Sir David Murray. After generations of Jessiaume making the wines, a new team arrived in 2014 and the Domaine changed its direction. The wines are hand crafted with minimal intervention. In order to do that, new investments in equipment and renovating the winery took place immediately. Harvest and sorting are done by hand. Small elevators are used to fill the tanks. Vinifications are done with natural yeasts and the extractions are gentle and controlled. The goal is to obtain elegant and fine wines which respect the terroir.
The year 2020 marked a big turn for Domaine Jessiaume. Sir David Murray sold the Domaine to Dr Jean-François Le Bigot. This Burgundy lover wishes to impulse the qualitative direction of the Domaine. The team stays and focuses on the quality. The vines and the wines are now organic and new investments in the winery are made. A new system to manage the temperature of the wines is installed. A strict selection of barrels from the best barrel makers is started.In the far southern end of the Côte de Beaune, Santenay forms a little notch that juts into the otherwise straight border with Côte Chalonnaise.
Santenay red wines show the true essence of red Burgundy at good price points and without demanding a lot of cellar time. Enticing aromas of rose-petal, violet, red fruits and licorice lead to sturdiness on the palate. With soils rich in oolitic limestone and marl, this is the home of well-constructed, hearty Pinot noir and represents a fantastic region to explore if you are just beginning your understanding of red Burgundy.
Reputable vineyards of Santenay include La Maladière, as well as the Premier Crus of La Comme, Clos de Tavannes, and Les Gravières.
