Bistecca alla Fiorentina for Lunch at Osteria Enoteca San Guido (Sassicaia), Bolgheri, Tuscany - Wine Country Italy (Lake Como, Tuscany, Alto Adige) in 2025

Second Stop: Bolgheri (Tuscany)

This was an organized group tour, led by wine journalist Giuseppe Lauria. We spent 4 nights in Bolgheri.

Day 3 in Bolgheri 

Following a tasting of the wines of Tenuta di Biserno at Relais di Biserno and a barrel tour and tasting of the wines of Tenuta San Guido, including the famous Sassicaia, we had lunch at Osteria Enoteca Guido.

Osteria Enoteca San Guido

The restaurant has indoor and outdoor seating. We opted for outdoor. As part of the Tenuta San Guido estate, it's known the wine list is extensive and features top-shelf selections. You can even try Sassicaia by the glass.

Bistecca alla Fiorentina: The Florentine Steak
 
Bistecca alla Fiorentina, or Florentine steak, is a traditional Tuscan dish that holds a special place in Italian culinary culture. It's a thick-cut T-bone steak, traditionally sourced from the Chianina cattle breed.
 
Authentic Fiorentina steaks are typically 3-4 centimeters (about 1.5-2.5 inches) thick and can weigh between 1.2 and 1.5 kilograms (2.5 to 3.3 pounds). The thickness is crucial for achieving the desired rare doneness in the center while developing a flavorful crust on the exterior.
 
The meat is typically dry-aged for at least two weeks, with four weeks being considered ideal, to enhance flavor and tenderness. 
 
It is grilled over very high heat, ideally using a wood-fired grill, to sear the exterior while keeping the interior rare. Cooking times vary depending on the thickness of the steak, but generally, it's grilled for a few minutes per side until the desired doneness is achieved.
 
The steak is often carved off the bone and sliced into thick pieces for sharing. It's traditionally served rare to maintain its characteristic tenderness and flavor.
