Fifth Stop: Trentino-Alto Adige
 
The last stop of our Italy wine tour 2025 was the Trentino-Alto Adige region. We stayed 3 nights in Lana at Hotel Tiefenbrunn and 3 nights in Bolzano at Hotel Laurien.
 
We visited 10 wineries, most of them during the second half of the stop when we were based in Bolzano. 
While in Lana, we had a light dinner at Hotel Im Tiefenbrunn in Lana and went out for dinner to Sissi (1 Star Michelin) in Merano and to Gasthaus Appollonia (Bib Gourmand Michelin), up in the mountains, above Nalles. 
 
While in Bolzano, we had dinner at Toma by Lisa (wine bar), Loewengrube in Bolzano (Michelin listed) and Voegele (Bib Gourmand Michelin) in Bolzano.

Our last dinner, while in Lana, was at Gasthaus Apollonia, up in the mountains. We went there by car. it was not that far from our hotel in Lana, but quite a drive on the narrow, winding road up and down the mountain. And worth it! It was an amazing evening:  "Handcrafted meals, regional ingredients, and a great team. Up here, nature sets the pace. Good cuisine can be very simple. Authentic, connected to nature, and above all: delicious. This is the philosophy of the Geiser host family.

Here in the mountains, down-to-earth and informal hospitality is the best way to celebrate cuisine. We serve only the finest on our plates, using local and fresh ingredients from our homeland as often as possible. We take carefully selected products straight from the field and farm, combine them with traditional recipes, and add a contemporary touch. It's as simple as that.

Genuine flavours all year round: whenever possible, our garden or the local farmer next door provides us with fresh, seasonal ingredients. Even our meat is locally sourced whenever possible. Enjoy our homemade aperitifs, excellent South Tyrolean wines, and heartfelt hospitality.

Our motto? Less is more. We cherish the flavours of individual ingredients and the quality of our products. We are on a first-name basis with our producers and suppliers, knowing exactly where our ingredients come from and how they are grown.

At Apollonia, nature is our greatest teacher. She teaches us patience and the importance of taking time to enjoy good food and great conversations.

Apollonia (Bib Gourmand Michelin)

Following a road that twists and turns uphill, surrounded at first by vineyards and fruit trees and then by woodland, you climb to an altitude of 900m to reach this restaurant run by the Geiser family, who have been serving simple yet delicious regional (and Italian) cuisine here for three generations. With a focus on seasonal ingredients from the Alto Adige, the menus feature specialities such as potato rosti with beetroot, baked pumpkin, broccoli and porcini mushroom cream, as well as home-made tarts and sorbets. The beautiful views take in Terlano in the middle of the valley and the majestic Dolomites (including Sciliar, Catinaccio and Latemar) in the distance. 

Apollonia (Gasthaus.it)

Nestled in nature with breathtaking views of the Dolomites and the Romanesque St. Apollonia Chapel, the Apollonia has been welcoming guests since 1962. Run by the Geiser family, this idyllic restaurant is known for its hearty, seasonal cuisine and homemade specialities. Its spacious dining room and cosy terrace offer the perfect setting to enjoy dishes that celebrate local ingredients. In spring, wild herbs and asparagus from Nals are menu highlights, while in autumn, South Tyrolean apples and chestnuts take centre stage. The Apollonia house aperitifs, made with homemade syrups, are legendary; the raspberry-rose, nettle, blackcurrant, quince and rhubarb-strawberry spritzes are particular favourites.
