Annette and I had dinner at JAN in Munich, with Cornelia and Chris.
JAN is owned and run by Jan Hartwig, one of the ten 3-star Michelin Chefs in Germany currently.
JAN is an independent restaurant in Maxvorstadt in Munich and not part of a luxury hotel complex (which is more typical for 3-star Michelin restaurants).
The menu was Euro 340. You could add signature dishes, which we did not do. Including 4 bottles of wine and tip, we payed Euro 1900 for 4 people.
The food was at the highest level of sophistication - classical cooking, a strong (Bavarian) meat component and limited plating elements, with an open kitchen. The service was impeccable and the dining room frugal with no table clothes on the dining table. The wine list is very good, but not spectacular.
Arguably, Jan Hartwig and Christian Bau of Victor's Fine Dining by Christian Bau represent the pinacle of cooking in Germany currently.

Jan Hartwig ist geradezu ein Garant für absolutes Spitzenniveau. In
seinem eigenen Restaurant kreiert er ein fixes Menü mit sieben Gängen,
erweiterbar durch Signature Dishes. Alles ist präzise und durchdacht bis
ins Detail, eigene Identität inklusive - klasse Kombinationen, die auch
mal unerwartet sind. Geschmacklich wie optisch ein "Wow"-Gang ist z. B.
die erstklassige Felsenrotbarbe, überzogen mit einer Joghurtcreme mit
Knoblauch und Plankton im Form von schwarzen und grünen Streifen. Als
perfekte Ergänzung ein sehr eleganter Krustentierschaum. Das angebotene
Menü gibt es mittags wie abends, am Mittag auch als verkürzte Variante.
Klar, chic und wertig das Design, je nach Platz kann man durch die
offene Tür oder den offenen Pass in die Küche schauen - man nennt sie
"Labor der Liebe". Stimmig die Atmosphäre, engagiert und professionell
das Serviceteam um Maître Kilian Skalet. Schöne Weinkarte samt
Spezialitäten wie Magnums, Doppel-Magnums und besondere Jahrgänge.

Just six months into opening his eponymous Munich restaurant, Jan Hartwig received three Michelin stars for his efforts. Located a few blocks north of the city Hauptbahnhof, the chef’s second restaurant in the Bavarian capital is a masterclass in precision cooking. Front-of-house service from maître d’ Kilian Skalet and sommelier Jochen Benz is similarly flawless. The menu, a fixed seven-course affair that’s shortened for lunch (and which can be extended with supplementary courses of Hartwig’s signature dishes), capitalises on the chef’s sleek, stylish haute cuisine. Courses are miniature artworks on a plate, and frequently are surprisingly colourful: a foie gras wonton dumpling arrives glazed a shocking shade of beetroot red, while slivers of arctic char share the plate with an onion broth split by verdant kaffir lime oil. Note the sign above an archway offering a glimpse into the clockwork workings of the restaurant’s kitchen, the “Labor Der Liebe” – laboratory of love. A fitting detail for Hartwig’s paragon.
Vita und Auszeichnungen
2000 Jan Hartwig startete seine Karriere mit seiner Kochausbildung im Restaurant Dannenfeld (ein Michelin Stern) in Braunschweig.
2003 arbeitete er bei „Pomp Duck and Circumstance“ in Berlin.
2005 arbeitete Jan Hartwig im Zwei-Sterne-Restaurant Kastell in Wernberg-Köblitz unter der Leitung von Christian Jürgens.
2006 wechselte er zu Klaus Erfort, um im Saarbrückener Zwei-Sterne-Restaurant Gästehaus Klaus Erfort zu arbeiten.
2007 fing er an, im Zwei-Sterne-Restaurant Aqua in Wolfsburg unter der Leitung von Sven Elverfeld zu arbeiten, wo er ab 2009 bis zu seinem Weggang 2014 Souschef war.
2009 erhielt das Restaurant drei Michelin-Sterne.
2014 im Mai übernahm Jan Hartwig seine erste Stelle als Küchenchef im Restaurant ATELIER im Münchner Hotel Bayerischer Hof. Bereits 2015 wurde das Restaurant mit zwei Michelin-Sternen und ab 2017 bis zu Hartwigs Weggang im Spätsommer 2021 mit drei Michelin-Sternen ausgezeichnet. Damit war kein deutscher Koch schneller als er. Jan Hartwig ist damit auch der erste Koch in München, der 23 Jahre nach Eckart Witzigmann drei Michelin-Sterne erhalten hat.

Der gebürtige Regensburger hat sämtliche Stufen im Bereich F&B im Althoff Seehotel Überfahrt mit Erfolg durchlaufen. Zuletzt in der Rolle des stellvertretenden Restaurantleiters, zuvor war er Chef de Rang und davor Commis de Rang. Als Demichef de Rang sammelte Kilian Skalet zwischendurch Erfahrung im Hotel Louis C. Jacob in Hamburg. Von Juli 2018 an war er Restaurantleiter Palio, Celle. Seit Oktober 2022 ist er Restaurantleiter des JAN in München.
Julia Kolbeck war von 2022-2024 Restaurantleiterin im Tohru in der
Schreiberei. Zuvor hatte sie dort die Stellvertreter-Position inne. Sie
war schon zu Werneckhof-Zeiten als Mitarbeiterin im Service dabei, ist
staatlich geprüfte Sommelière und ist nach einer Weiterbildung auch
wieder mit im „SALON rouge“ eingestiegen. Nicht nur durch ihre früheren
Stationen, unter anderem als Chef de Rang im „Esszimmer“ von Sternekoch
Bobby Bräuer, bringt die Straubingerin viel Erfahrung mit. Anfang 2024
ist sie ins Drei-Sterne-Restaurant JAN gewechselt.
